feijoa, lychee and mango cocktail

How tropical does this sound? It’s such a shame feijoa season is so far away from this sultry summertime weather we’re having right now in Australia. This would go down a treat.

FEIJOA, LYCHEE AND MANGO COCKTAIL

Serves 4

Ingredients

  • 1 mango, peeled and stone removed, reserving a small slice, finely diced, for garnishing
  • 10 peeled fresh lychees, or use tinned, reserving one, finely diced, for garnishing
  • 1200ml feijoa vodka*
  • juice of 1 lime
  • 1 cup lychee juice

To make

  1. Put all ingredients in a processor or liquidiser and process for 1 minute or until smooth.
  2. Pour into martini glasses and sprinkle prepared garnish onto each glass.

*As far as I know there is only ONE feijoa vodka you should consider  –  42 Below Vodka, made in New Zealand (you need to be over 18 to visit the site).

    1. Hmmmm. A typical martini glass holds around 250ml/8oz so the 1200ml looks entirely wrong. However, I would propose that 120ml would be better for those with sensitive heads or who may be driving – and 1200ml would be perfect for university share houses! The original recipe does say 1200ml but, as I am discovering, so many recipes have mistakes. I would “adjust to taste”.
