Here’s another easy to make cake, posted on Facebook’s fan page for feijoa lovers.

SPICED FEIJOA CAKE

Ingredients

  • 125g butter, melted
  • 1 cup chopped feijoas
  • 1 cup sugar
  • 1 egg
  • 1 1/2 cups flour
  • 1 teaspoon salt
  • 1 teaspoon baking soda
  • 2 teaspoons cinnamon
  • 1 teaspoon allspice

Topping

  • 1 1/2 tablespoons butter, melted
  • 1/2 cup rolled oats
  • 1/4 cup brown sugar
  • 1 teaspoon white sugar

Method

  1. Add feijoas, sugar and egg to the melted butter.
  2. Beat well, then fold in sifted dry ingredients.
  3. Pour mixture into a lined cake tin.
  4. Combine topping ingredients and sprinkle over cake.
  5. Bake at 180℃ for 30-40 minutes, until the centre springs back when pressed lightly.
