FEIJOA MOJITO

Ingredients

  • half a lime, in wedges
  • 3 large mint leaves
  • 3 parts blended feijoa pulp / feijoa smoothie in the off season
  • 2 parts white rum
  • soda water to top up
  • ice

Method

  1. Muddle lime and mint in the bottom of a highball glass. Almost fill glass with ice, then add the rum and feijoa.
  2. Top up with soda water and (this is important) drink through a straw.
